Black & Wild Mushroom, locally known as "KAANGEJ / GUCCHI" is an exotic species of the Mushroom Family. Also known as 'Cuisine of the Royal'. One of the Rarest and the Costliest mushrooms due to its Minimum Availability and Skills involved in capturing this mushroom during Spring season at the time of Natural Lightning on Mountains from where it emerges and then vanishes. Its found in the Hilly areas of Kashmir Forests. Being a Natural Wild Mushroom with Smoky Taste and Aroma, these Morels have unique Liking which makes it the most expensive mushroom of all times. It should be first soaked in hot water before consumption. 100 gms of Kaangej mixed with some other vegetables is sufficient to serve a meal for a Family of 5-6 people. Until mid 80's it was primarily cooked and the scene in Kashmiri Bride's wedding and many were fortunate enough to taste Kaangej in such ceremonies only. It's now mainly used in 5 Star & 7 Star Hotels for garnishing purpose.
